I think it would be harder than you might think: "sealedness" is a feature of IL, so allowing extension of sealed classes would produce invalid IL.
I guess it could be done by wrapping the sealed class with a new type and replicating all its properties/methods and adding the new ones but that'd be pretty ugly...

I recently watched a video on channel9 about mocking types with replacing any method / property with delegates.

That reminds me on F# object expressions.
But object expressions dont work on selead types.
e.g.
let now = { new System.DateTime() with member x.Now() = new DateTime(2000,1,1) }
Well, IMHO you should make this code work in a further relase of F#!
