Unselectable hidden option

Is there a function that creates select like this:

  <option selected disabled hidden value=''>select an item</option>

I assume you want this for UI.Next? There is indeed no function that does quite what you want. There's Doc.SelectOptional where the first option is selectable and returns None, but none where the first option is hidden. I guess a more customizable variant of Doc.Select, which would allow for this and maybe also for stuff like <optgroup>, would be in order. I'm thinking about what would be a good API for it, I'll come back to you.
